mary’s marvelous cream puffs – gluten free has never been so delicate!

Looking for a light and delicate yet quick and easy dessert? Try these delicately crisp-on-the-outside and oh-so-creamy-in-the-middle cream puffs. Serve them with Greek yogurt and fresh fruit at brunch or with whipped cream or whipped coconut milk, powdered sugar, and a drizzle of chocolate for a special dessert. To be truly decadent, try serving them with Food Mouth’s Whipped Nutella Fluff – WOW!

Cream PuffMy mom came across this recipe on a box of rice flour decades ago and has been making them ever since. They look like they took a French chef all day to prepare but are astonishingly easy to make and ready to eat in under an hour.

Christmas Eve Dessert – it’s gluten free AND comes with presents

gluten free danish apple cakeWhen my great grandparents came to Canada in 1920, they brought many of their traditions from Denmark along with them. One holiday tradition in Scandinavia is to have rice pudding on Christmas Eve. The pudding contains one whole almond and whoever gets it in their dish gets the Almond Gift, usually a marzipan pig symbolizing good fortune. As my family settled into life in rural North America, this Christmas Eve custom transformed. For reasons unknown, the rice pudding became a Danish Apple Cake and the gift became a small token, often a trinket or toy. I should really say “gifts” because, at some point someone (I believe it was likely my grandmother) added one or two more almonds and gifts into the mix just for the fun of it.

My family has had this dessert on Christmas Eve for as long as I can remember (and I’m sure much longer). I still have a little china dinner bell I received when I was a child and my grandmother made the dessert. This year I’ll be making the cake, and it will be transformed once again into a gluten free version. If you’re looking for a light and airy, not to mention fun, dessert, then this is the recipe for you. The “cake” itself is more of a parfait. It’s easy to make and tastes awesome – a bit like apple pie. Hmmmm, maybe that’s why this tradition was transformed!

ferrero rocher copycat recipe (and it’s gluten free)

gluten free ferrero roche. gf and meBeen missing Ferrero Rocher since you went gluten free? Well Geoff has. It used to be one of his holiday favorites, so this year we decided to try to make some that were gluten free. The results were incredible – although perhaps not as pretty as those little gold and silver foil-wrapped balls of chocolate! We did, however, feed them to some unsuspecting gluten eaters who all said they liked these even better than the original. In fact, they ordered requested we make more! If you like nutella and chocolate then this is the recipe for you!

Gluten Free Almond Roca

I wish I could photograph the crunch and the sweet toffee goodness of this almond roca – not to mention the buttery caramel scent of my kitchen at the moment! This candy is easy to make – it takes about an hour – and tastes like the real thing. You can add chocolate if you want, but we like it just like this!

gluten free turnovers!

gluten free turnoversThe word “turnover” first appeared in print in 1798 (Oxford English Dictionary), but the 1753 edition of The Complete Housewife: or Accomplish’d Gentlewoman’s Companion includes a recipe for an early version called “Pasties.” These were made with apples, ambergris or orange flower water, and puff paste. Our recipe doesn’t have anything as exotic as orange flower water or ambergris, but they are gluten free and taste fabulous! Difficult to make the first time, they get easier once you get the hang of it, and are certainly worth the effort. These are filled with cherry pie filling but you can use any filling you want – including savories if you omit the sugar.

Pumpkin Pie Cheesecake

This cheesecake makes a great Thanksgiving dessert – both traditional and a bit different. You can make it with a crumb crust (recipe included) or bake it crustless. Either way, the cheesecake is creamy and light with a hint of pumpkin and cinnamon.

mary’s magnificent pastry – just in time for pie season!

My first pie – ever – and the crust was light, crisp, and flaky! I have never had the need to make pies. My mom Mary is known for her pies, gluten free and not, and she delivers a steady stream of these tempting treats: apple, rhubarb, lemon, coconut cream, the list goes on. Last week was chocolate – awesome! Here is her recipe for gluten free pie crust and since I’m posting it, I figured I better give it a try so I know what I’m talking about.
