gf and me’s pizza – you’ll never guess it’s gluten free

This pizza crust is incredibly easy to make. The hardest part is waiting for the dough to rise, but when it does the result is a not-too-soft and not-too-hard pizza crust that tastes divine. I know we said before that Gluten Free Pantry’s french bread mix made the best pizza crust ever, but we were wrong. (It happens sometimes…) This recipe – based on our gluten free white bread recipe – results in a lighter crust and has little to none of that gluten free after taste. No having to make sure that every inch of this crust is covered with sauce! In fact, this is the closest to a wheat flour pizza crust that we have eaten so far – and we have eaten many a gluten free pizza. gluten free pizza recipe. gf and me

gluten free coconut shrimp

Have you been missing coconut shrimp since you went gluten free? These gluten free ones are sweet, salty, and pop-in- your-mouth tastey. And they are easier to make that you might think. Once you get the hang of it, you can throw these together in minutes. They make for great appetizers or party fare, but if you luv ’em as much as we do, you might want to serve them up for dinner with some Jasmine rice and a salad. gluten free coconut shrimp recipestuffed raspberries. gfandme 2013.gluten free nuts and bolts

gfandme’s gluten free beef dip sandwich

I love beef dips and this is one of the best I’ve ever had – glutenous or non-glutenous. Based on our slow cooker roast beef recipe, the meat and the jus are slow roasted in a crock pot. The meat is fantastic on its own, nicely browned with lots of flavour, and the dip is salty and savory with just a hint of peppery hotness. The sandwich takes some effort, but it’s certainly worth it!gluten free beef dip sandwich

For the bread, we use:

The crust on the baguette is a bit hard for dipping and eating, so we pour the jus over top of the sandwich and eat it with a knife and fork. Continue reading

gf and me’s taco seasoning

This recipe can’t be easier. Just mix together these few ingredients, store in an airtight container, and you’ll always have your favorite taco seasoning at the ready. Add a little – or a lot – to flavour your taco fillings or use it to make a tasty taco salad. And it’s easy to make it your own: add as little or as much salt as you want, fire it up with more pepper flakes, or cool it down by leaving out the cayenne. It’s up to you! gfandme Taco Seasoning

baked fusilli with chicken and marinara

To us, the only thing better than pasta is baked pasta. This fusilli is layered with a garlic tomato marinara, pieces of tender chicken, and two types of cheese and then baked in the oven until the cheese is melted and has a light crunchy crust. Mmmmmmm. And did I mention this is quick? 30 minutes from fridge to table makes this a great weeknight meal.

gluten free beef stew

This gluten free beef stew makes a hardy savory dinner and any leftovers can be frozen and reheated for busy weeknights. We think that the trick to an excellent stew is a lot of beef flavour – we are from Alberta after all! With a triple hit of beef stew meat, beef stock, and beef bouillon, this recipe fits the bill. Oh, and carrots – for some reason I love carrots in stew. gluten free beef stew in gf bread bowlLast year, in honour of St. Patrick’s Day, we decided to try making gluten free bread bowls. Our Crusty Bread recipe was just the right size and held up well!

Roasted Sweet Orange Chicken

roasted sweet orange chickenMarinated in a honey-orange marinade, this chicken comes out of the oven soft, tender, and juicy.  The zest in the marinade really adds the flavour of  oranges to the dish which also has a hint of spice from the chili pepper and sweetness from the honey.  Goes well with a tossed salad, or for something heartier, pair it with rice.

warm up with gluten free beef & vegetable soup

This takes a bit of time to make but it’s worth it in the end. You’ll end up with a bowl of savory homemade warmth.vegetable beef soupIt’s a lighter soup, so you may want to serve it for lunch or pair it with biscuits, a salad, or gf panini for dinner. It also freezes and reheats well, so make extra. And if you use low sodium broth, no salt added tomatoes and tomato sauce, you can cut the amount of salt in this considerably.

gluten free turkey and havarti panini

Panini is the perfect way to eat gluten free bread and this is one of our favorites. The havarti is mild enough to let the taste of the turkey shine through and adds just the right amount of salt and creaminess. Serve it with a side of cranberries and you’re in heaven! gluten free turkey and havarti paniniThis is great with any turkey but is especially good with leftovers from our marinated grilled turkey breast.
