gluten free cheese and onion rolls: soooo easy to do

If you are looking for a quick and easy – and delicious – gluten free dinner roll recipe, this is it! Based on our recipe for white bread mini loaves, these rolls are easy to make, fluffy and airy, and taste fantastic.  And yes, they use yeast but please don’t think that means they are complicated to make. While you do need to leave them time to rise (40 minutes) the rest is as easy as pie… No, scratch that. Time: 1 hour 30 minutes

Servings: 6

What you’ll need:

1 cup lukewarm water

1 tablespoon sugar

1 teaspoon yeast. (We use Fleishman’s Instant Quick Rise Yeast)

1 ½ cups Cup 4 Cup gluten free all purpose flour

TIP: Around these parts, you can get Cup 4 Cup at Sobeys South and at Save On Foods.

1 ½ tablespoons Expandex modified tapioca starch

TIP: Expandex is hard to find here in Canada. We ordered ours online. If you don’t have any, it can be left out. The resulting rolls will taste the same but will have a slightly different texture.

½ teaspoon salt

2 tablespoons whey protein

TIP: We use “100% Whey Protein” which can be purchased at health food and body building stores. Be sure you buy one that’s unflavoured.

1/4 – 1/2 cup coarsely grated cheese. (We like a good medium cheddar for this.)

2 tablespoons to 1/4 cup green onions, chopped.

1 tablespoon melted butter (for coating after baking)

 

What you’ll do:

Mix water and sugar together and add yeast. Set aside for at least 5 minutes.

In the meantime, put remaining ingredients in a large bowl and mix well.

Make a well in the centre of the dry ingredients and add yeast mixture. Stir well. The dough will be sticky and quite wet.

Spoon the dough into 6 regular sized greased muffin cups.

Cover your pans and set in a warm place until the dough doubles in size. We usually leave it for about an hour.

When you are ready to bake the bread, preheat your oven to 400 degrees. Place pans in the oven and bake rolls for about 20 minutes or until golden brown.

When finished, remove from the oven and brush the top with melted butter. If you really want to spoil yourself, sprinkle them with a little salt too.

    • I know. I always thing that too 😉 It’s not like xanthan gum. It helps to replace the gluten protein and helps foods expand rather than stick together.
