gf and me’s Gluten Free Cake-In-A-Mug

It’s late. You have a craving for something sweet and chocolatey. But you’re GF and it’s difficult to just run to the store and pick up something. What do you do?

You make gf and me‘s three minute cake-in-a-mug, that’s what you do.

You’ll want to bookmark this recipe ’cause you’ll be back for it, I guarantee.

What you’ll need:

4 tablespoons of GF all-purpose flour (If you have access to it, Cloud 9‘s GF flour works really well. If not, Bob’s Red Mill all-purpose is good also and more readily available.)

pinch of xantham gum (Can be found in GF stores, bulk food stores, and specialty food stores)

4 tablespoons sugar

2 tablespoons cocoa

1 egg

3 tablespoons milk

3 tablespoons oil

splash of vanilla

Optional Ingredients:

2 tablespoons chocolate chips or nuts

GF Icing (At the time of posting this recipe, Duncan Hines Creamy Home-style Chocolate Icing is labelled gluten free and works great or make your own.)

What you’ll do:

The ingredients for this cake need to be mixed very well. If you have an electric hand mixer then just put all the ingredients in a mug or 2 cup measuring cup and blend well. If you don’t have an electric hand mixer then do the following:

Place dry ingredients in coffee mug or two cup measuring cup and mix well.

Add egg. Mix again.

Pour in milk and oil. Mix well.

Add vanilla and any optional extras and mix again.

Put mug in microwave and cook for 3 minutes at 1000 watts. Cake may rise over the top of your mug but that’s ok. In fact it’s great. Kudos to you!

Remove the cake from the mug, slice it in half and ice each half with GF icing if desired. Also goes well with Chapman’s GF vanilla ice cream.

TIP: This cake doesn’t keep well, so you have an excuse to eat the whole thing right away. However, if you have the will power and want to save some for tomorrow, the best thing to do is to wrap the leftover cake in tinfoil (remove any icing) and plump it in a 350° oven for 5 to 10 minutes before serving.

    • Thanks for coming by! The cake in a mug is great but you do need to eat it fairly quickly or it goes quite hard. The sinful chocolate mousse cake is awesome too. I keep thinking I should adjust the ingredients to make a single serving version. Sometimes you just don’t need an entire cake!
