Perfect for a spring party, these bite-sized white chocolate truffles are melt-in-your-mouth creamy and oh-so-lemony. And all you need to make them is a microwave and a fridge! Here they are rolled in tinted coconut but they could also be rolled in sprinkles, or cocoa, or icing sugar. (Scroll down for the recipe!)

The flavours of orange and chocolate come together in these sink-your-teeth-into-‘em chewy, crumbly flourless cookies. Made using a base of rolled oats, they are also relatively low calorie coming in at about 50 calories per cookie. They do, however, tend to crumble very easily, but we just put the crumbly bits in a bowl and serve it up as one awesome gluten free granola! My mom, Mary, kindly gave us this recipe. Thanks mom!
NOTE: Not everyone on a gluten free diet can tolerate oats. If you have concerns, please contact your doctor or dietitian.
