Based on my great-grandmother’s recipe for Danish Apple Cake, this gluten free no-bake cake tastes like apple pie but won’t overheat your kitchen. It’s also super-easy to throw together and can be made the day before making it the perfect dessert for a busy summer BBQ. Give it a try. You won’t regret it!

What you’ll need:
2 ½ cups unsweetened applesauce
TIP: My great-grandmother made her own apple sauce, but store bought is waaayyyy easier!
1 1/2 cups gluten free crumbs
TIP: My great grandmother used toasted bread crumbs, but we use gf vanilla wafer crumbs, ginger cookie crumbs, or gf “graham” cracker crumbs. If you can’t find crumbs, purchase cookies and pulse them in your food processor until they are medium-sized crumbs.
1/8 teaspoon nutmeg
1/8 teaspoon allspice
2 teaspoons cinnamon
TIP: Add more spices if you want it a bit spicier.
¼ cup sugar
2 tablespoons butter
Lots of whipped cream – LOTS!
What you’ll do:
Melt butter in frying pan over medium heat. Add crumbs, sugar, and spices and heat until blended and slightly toasted.
Remove from heat and spread on cookie sheet or plate to cool.
In a parfait bowl, alternate layers of crumbs and applesauce. Can be served immediately but is best if it is refrigerated overnight.
