Here are two recipes for turkey that take no time at all and taste absolutely fantastic! Both create a moist, perfectly cooked turkey breast that can be sliced for dinner or saved in the refrigerator for those amazing turkey sandwiches everyone loves so much (on gf bread of course!)

Recipe #1:

This is a basic recipe that results in the tenderest turkey breast you have ever tasted – guaranteed. With very few ingredients, that turkey taste shines through.

1 turkey breast – boneless and skinless

1 tablespoon light tasting olive oil or canola oil

salt and pepper to taste

Heat your griddler/indoor grill/sandwich maker to medium high heat. (We use a Cuisinart Griddler with the panini grills.)

TIP: If you don’t have a grill you can heat two heavy frypans to medium high heat. Place the turkey breast in one and set the second hot pan on top of it. Press or weight down to cook the breast from both sides.

Brush the turkey breast with oil and sprinkle with salt and pepper.

Cook on the grill for 10 to 15 minutes depending on the thickness of the breast. Make sure the thickest part of the breast reaches 175 degrees.

Remove from grill and let rest covered in foil for 5 to 10 minutes. Slice and enjoy!

Recipe #2

This recipe is a bit more elaborate and results in a tender turkey breast with a hint of teriyaki flavour.

1 boneless, skinless turkey breast

1 teaspoon minced garlic

1 teaspoon basil

¼ cup vegetable oil

¼ cup GF Soy Sauce (We use Kikkoman Gluten-Free Soy Sauce)

2 tablespoons lemon juice

1 tablespoon brown sugar

black pepper to taste

What you’ll do:

Wash and then pat the turkey breast dry with paper towel.

In small bowl, mix the garlic, basil, and pepper to make a rub. Apply to meat.

In a shallow seal-able container, mix together the oil, soy sauce, lemon juice and sugar to make a marinade.

Place turkey breast in the container and toss to coat. Refrigerate for at least four hours to overnight, turning occasionally.

Cook as above or on the BBQ.

For the BBQ:

Heat your BBQ grill and turn to low.

Place the turkey breast on the grill, close lid, and cook to an internal temperature of 165 degrees or until juices run clear – about 1o minutes per side depending on the size of the breast and the temperature of the grill.
