gf and me’s teriyaki stir fry

This hearty stir fry has lots veggies and great teriyaki flavour. It’s quick and has great “plate” appeal, making it the perfect choice for a busy work day meal or for easy entertaining.

It can easily be veganized by removing the beef and using a GF vegetable stock.

What you’ll need:

3 tablespoons gluten free soy sauce (We like Life Source Tamari Soy Sauce)

1 tablespoon water

2 teaspoons brown sugar

1 teaspoon garlic powder

1 teaspoon ginger

1 pound of steak cut into strips

1 tablespoon oil

1 cup gluten free beef broth (We like to use Kitchen Basics)

4 teaspoons cornstarch

Approximately 3 – 4 cups of vegetables. We like to use:

½ red pepper cut into slices

½ yellow pepper cut into slices

1 cup snow peas

1 cup broccoli, cut into bite size pieces

2 carrots, sliced diagonally

 

What you’ll do:

Mix together the first five ingredients. Add steak strips and let marinate at least 10 minutes.

Mix together broth and cornstarch. Set aside.

Heat oil in skillet and stir fry beef until browned. Add vegetables and stir fry until just starting to turn tender.

Add broth mixture to pan and bring to a boil. Boil for 1 minute.

Serve over gf fettuccine or a bed of rice.
